I had picadillo for lunch today, and it suddenly struck me as really interesting. It’s basically the same idea—ground meat in a tomato base, plus potatoes and veggies—but depending on where you are, it ends up having a totally different personality. Some people swear the Spanish version is the real one, others insist Mexico is where it truly belongs, and some say the Caribbean style is the one with the most soul.

But what I’m really wondering is: when a dish has lived in different places for a long time and evolved in its own way, is calling something  authentic actually about protecting tradition—or does it quietly turn into a kind of gatekeeping? Do you care more about authenticity, or do you care more about it simply tasting good?
